Seva's Vegetarian Black Bean Chili

(I usually double the recipe when I make for Thanksgiving!)

Ingredients

cup dried black beans, soaked

cups water

tbsp Canola Oil (or Olive Oil)

cloves garlic, chopped

cups diced onions
1 1/2
cups diced carrots
2
stalks celery, sliced
1 1/2
cups canned tomato sauce
3/4
cup canned diced tomatoes (with liquid)
1/4
cup bottled salsa
1/4
bunch cilantro (optional)
2
tsp chili powder
1
tsp ground cumin
1
tsp oregano
1/8
tsp cayenne pepper
2
tsp salt
1 1/2
tsp black pepper
Directions
1.
Soak beans according to package
2.
Saute the oil, garlic, onions, carrots and celery in a 2 or 3 quart saucepan, stirring often until onions and carrots are soft.
3.
Add the other ingredients to the saucepan and simmer for 30 minutes.
