Vegetarian Stuffed Peppers

Ingredients
1/2
cup uncooked rice
3/4
cup water
4
bell peppers (I usually use green but other colors may be more gentle on the tummy!)
1
onion, chopped
4
tbsp olive oil
8
oz textured vegetable protein (like veggie crumble or tempeh would probably also work)
2
tbsp chopped fresh parsley
2
cups tomato sauce
4
oz shredded mozzarella cheese (or mixed shredded)
(sometimes I add a little parm too)
salt to taste
groung black pepper to taste
Directions
1.
Combine rice and water in a small saucepan. Bring to a boil, reduce heat to low and simmer for approx. 15 minutes.
2.
Preheat oven to 400

Cut tops off of peppers (SAVE), cut out seeds inside and arrange peppers in a large baking dish.
4.
Chop usable portion of the tops and save for filling.
5.
Heat oil in a large skillet over medium heat. Saute chopped peppers and onions in oil until soft.
6.
Stir in textured vegetable protein and parsley.
7.
Reduce heat to low, and continue cooking for 5 minutes.
8.
Mix in cooked rice and 1 1/4 cups tomato sauce.
9.
Season with salt and pepper to taste.

Now I mix the cheese into the mixture too but the real recipe just says to put it on top.)
11.
Spoon the mixture into the peppers, and top each with remaining tomato sauce.
12.
Cover, and bake about 45 minutes.
13.
Uncover, top each pepper with mozzarella cheese, and bake until cheese is melted.
