Chicken Pot Pie

Chicken pot pie with pre-made crusts

Ingredients

tbsp butter

tbsp all purpose flour

tsp salt
1
tsp fresh thyme (or 1/4 tsp dried

cup chicken broth
3/4
cup whipping cream
2
cup cooked chicken, cut into 1" pieces
1
frozen mixed vegetables
2
9-inch pie crusts
Directions
1.
Heat oven to 425.

Heat butter in 3-quart saucepan over low heat until melted. Stir in flour, salt, thyme and pepper to taste.

Cook, stirring constantly, until mixture is smooth and bubbly. Remove from heat. Stir in broth and whipping cream. Heat to boiling, stirring constantly. Boil and stir 1 minute.
4.
Stir in chicken and vegetables.
5.
Line baking dish with pie crust. Pour chicken mixture into pastry. Cover with remaining crust.
6.
Bake 35 to 40 minutes or until lightly brown.
