Maria's Crêpe Soufflé

This is a recipe invented by my mother, Maria Rasiej, creating a new type of pancake perfect for breakfast or even to carry a dessert topping. I remember my mother making this for me and my siblings.

Ingredients
1/2
cup all-purpose flour

large eggs
1/2
cup whole milk
1/2
tsp salt

tbsp unsalted butter
Directions
1.
Preheat the oven to 350°F. Combine the flour, eggs, milk, and salt together in a mixing bowl.

Melt the butter over medium heat in an oven-safe, 12-inch nonstick pan. Once the butter covers the bottom of the pan and just begins to brown, pour the batter into the center of the pan.

Let the batter lightly fry until the butter bubbles around the edges of the crêpe soufflé. Carefully pick up the pan, making sure to keep it flat, and place it in the center of the oven. Bake for 20–25 minutes, or until it’s brown and some parts have risen. It won’t rise or brown evenly, but that’s okay! Remove from the oven and serve immediately with jam or Nutella.
