Aunt Debi's Gazpacho

A healthful California adaptation of this Spanish classic. Nice to serve while waiting for dinner. Variations: add 1 cup green chile salsa and 1/4 tsp Tabasco sauce to make the soup hotter; chopped zucchini and chopped celery can also be used as garnish.

Ingredients

tomatoes, cut up
1
clove garlic

tbsp wine vinegar
1/4
tsp ground pepper
1
cup tomato juice
1
cucumber, peeled and diced
1
green bell pepper, seeded and diced
3
scallions, finely sliced
Bread sticks for serving (optional)
Directions
1.
Process tomatoes in blender or food processor until smooth. Add the garlic, vinegar and ground pepperl process again.
2.
Pour this puree into a container; add tomato juice and stir well. Chill.
3.
Serve in small chilled bowls with bread sticks. Add cucumber, green pepper and scallions for garnish.
