Abbie's Empanadas

With lots and lots of love, Buen Provecho!

Ingredients
Sofrito:
1
cubanelle pepper
Bunch of cilantro
4
cloves garlic
1/2
red onion
Packet of sazon
1
tbsp Olive oil
1
tbsp tomato paste
1
tsp dried or fresh oregano
1
tsp dried or fresh thyme
Empanadas: discos de empanada (pre-packaged - either for baking or frying)
1
lb ground beef
1
tbsp sugar
Sazon packet
Green olives to taste
Garlic powder to taste
Sprinkle of balsamic vinegar
Canola oil to fry/coat baking sheet

Blend all sofrito ingredients, add salt to taste

Marinate beef with 1 packet of sazon and 2 tbsp of sofrito for at least 30 minutes

Heat pan to medium-high, add oil
5.
Add tbsp of sugar to heated oil until it starts to caramelize
6.
Add blended sofrito to pan until all water cooks out.
7.
Add seasoned beef, breaking it up with spatula and mixing it in with sofrito
8.
When beef is browned add splash of balsamic vinegar and olives, stir, and allow all liquid to cook out
9.
Add spoonful of beef mix to discs, fold over and pinch ends to close empanadas
10.
If frying— heat up enough cooking oil to cover empanadas (~2 inches), when sizzling add empanada and flip over after 1 minute, remove, drain oil
11.
If baking, read instructions on package because frying is the way to go so I don’t know.
