Vegetable Frittata

Love all the fersh veggies!

Ingredients
2
tbsp canola oil, divided
1/2
cup chopped onion
1/2
cup chopped green pepper
1
garlic clove, minced
1/2
cup chopped red pepper
2
medium red potatoes, cooked and cubed
1
small zucchini, cubed
6
eggs
dash pepper
Directions
1.
Heat 1 T. oil in cast iron skillet.
2.
Saute onion, pepper and garlic till tender.
3.
Remove veggies with slotted spoon and set aside.
4.
In same skillet, lightly brown potatoes over medium heat.
5.
Add veggies and zuchinni and cook for 4 minutes.
6.
In a bowl, blend eggs and pepper and pour over vegetables.
7.
Cover and cook for 10 minutes or until eggs are nearly set.
8.
Place under broiler for 6 minutes until eggs are set.
9.
Cut into wedges and serve.
