Kimchi Sushi

Ingredients
1/2
cup sushi rice
1/4
cup vegan kimchi
3-4
nori sheets
1
tbsp rice vinegar
1
tsp sugar
1
tsp salt
bamboo rolling sheet
Directions
1.
Cook rice in a small pot covering it (do not lift the lid during the cooking process) for 10-15 minutes. Let rice cool off for about an hour.
2.
Lay nori on the bamboo rolling sheet with the rough side face towards you. Place rice on top and flatten out from the bottom to the middle part of the sheet.
3.
In a straight vertical line lay down your kimchi on top of the rice. Wet your fingers and run it along the top side of the nori, wetting the ends.
4.
Now begin rolling your sushi for detailed ways on how to properly roll sushi I’d recommend watching a video on youtube.
5.
Once you’re finished rolling begin slicing little pieces of sushi from the roll.
6.
Enjoy with a side of soy sauce!"
