Hot Fried Chicken Tenders

Ingredients
3
lb boneless skinless chicken breasts, cut into tenders
1
cup buttermilk
3
tbsp cayenne pepper
1 1/2
cups flour
1/2
cup cornstarch
1 1/2
tbsp garlic powder
Peanut oil
Honey and hot sauce for serving
Directions
1.
Cut your boneless skinless chicken breasts into 'tender size' pieces (3 or 4 strips per breast).

In a plastic, lidded container or ziploc bag, add buttermilk and 1 tbsp cayenne pepper, plus a generous pinch of salt and pepper. If you like it spicy, add more cayenne! Marinate chicken for 5-6 hours.

Mix flour, cornstarch, remaining cayenne, garlic powder and salt and pepper in a large shallow pan or bowl.

Meanwhile, pour oil into a cast iron pan about half way up and begin heating on high heat. Goal is to bring the oil temperature to 350 degrees.

While oil is heating, remove marinated chicken piece by piece and dredge in the flour mixture.
6.
Once oil is hot, fry chicken about 4 or 5 pieces at a time being careful not to overcrowd the pan. Cook for a total of 10 mins (or until chicken reaches internal temperature of 165 degrees). If chicken pieces are not fully submerged in the oil, flip chicken every 2 minutes.
7.
Serve with honey and hot sauce
