Warm Brussel Sprout Salad

Ingredients
1
lb brussel sprouts
1/3
cup nuts (sliced almonds, chopped pecans, or chopped walnuts)
1/3
cup dried fruit (craisins, apricots, mango)
Olive oil
Directions
1.
Trim and flake apart brussel sprouts by cutting each one into quarters, remove core, then flake apart. Set aside.

In a dry pan, toast nuts. Be careful they don't burn. Once toasted removed from pan and set aside.

While nuts are toasting, dice dried fruit if using a fruit like mangos or apricots. Craisins can be left whole. Place dried fruit in a large bowl combined with toasted nuts.

In the same pan, add olive oil and sauté brussel spout leaves for 5 minutes. Season with salt and pepper. You want to mostly cook through the sprouts, with some leaves getting a slight char. Combine with fruit and nuts. Toss well and serve!

My favorite combination are sliced almonds and dried apricots.
