Lightened Up Baked Potato Soup

Ingredients

(32 oz) box chicken broth

cups peeled and diced russet potatoes
1/2
cup diced white onion
1/2
cup cream cheese (1/3 less fat)
4
strips turkey bacon, cooked and sliced
1
cup shredded reduced-fat cheddar cheese
Chives or green onions for serving
Directions
1.
Add the chicken broth, potatoes, and onion to a 6-quart slow cooker. Cover and cook on LOW for 8 hours without opening the lid during cooking time.
2.
Ladle out half of the potatoes and a few ladles of broth into a blender, add the cream cheese, (secure the lid well and cover with towel to prevent possible burning), and pulse until smooth. Add this mixture back into the slow cooker and stir.
3.
Add the bacon and cheese to the slow cooker and stir. Ladle into bowls for serving and top with chives or green onions.
