Blueberry Lemon Muffins

These are a crowd pleaser. This recipe is also from a children's cookbook and I've been making them since I was nine. The zest and juice from the lemon add a nice kick to the recipe.

Ingredients

stick butter, softened
2
cups flour (whole wheat pastry flour if available
1/2
cup sugar
1
tbsp baking powder
1/2
tsp salt
1
cup milk
1
egg
3/4
vanilla
1
cup blueberries
1
lemon
Directions
1.
Preheat oven to 375 degree and line a muffin tin with liners or spray it with cooking oil.

Melt the butter in a medium sized bowl and set aside
3.
Put the flour, sugar, baking powder, and salt in a large bowl. Whisk to combine.
4.
Pour the melted butter into the dry ingredients. In the same bowl, lightly beat the egg. Add the milk and vanilla. Beat again the combine.
5.
Zest the lemon into the milk mixture and pour it into the dry ingredients. Juice the lemon with a juicer directly into the batter. Pour in the blueberries and stir to combine.
6.
Fill the muffin tins 2/3 of the way full.
7.
Bake for 18-20 minutes, or until golden and and a toothpick inserted into a muffin comes out clean.
