Chicken & Spinach Skillet With Lemon Parmesan Sauce

Quick and healthy week night dinner. I like to serve it with crusty bread and salad, but it can also be tossed in pasta or served over rice.

Ingredients
1
lb Chicken breasts, skinless and boneless
4
cloves garlic, minced
red pepper flakes
juice of 2 lemons
1
cup Parmesan
1
cup Spinach
3
olive oil
Directions
1.
Heat 1 tbl oil in large skillet, sear chicken until brown and just cooked through. Remove, cover with foil and set aside.
2.
Heat remaining oil in same skillet, add garlic, oil, lemon juice and red pepper. Simmer over low heat for about 10 min.
3.
Add parmesan cheese and stir until melted.
4.
Remove from heat and stir in spinach until wilted.
5.
Return chicken to pan and keep warm until ready to serve.
