Strawberry Basil Skillet Cake

Ingredients

lb strawberries, sliced or quartered

cup sugar, plus 2 tbsp

tbsp butter, plus more to grease cast iron

cup milk, room temperature

eggs, room temperature
2
cups flour
2 1/2
tsp baking soda
1
tsp salt
3
tbsp basil, chiffonade
Whipped cream for serving
Powdered sugar for serving
Directions
1.
Preheat oven to 350 degrees.
2.
Butter a 12 inch cast-iron skillet.
3.
Cut strawberries and stir together with 2 tablespoons sugar.
4.
Melt butter in microwave for 45 seconds in a small bowl. Once melted, whisk in milk and eggs.
5.
In a large bowl, whisk together flour, baking powder, salt, remaining 1 1/2 cup sugar and 2 tbsp basil.
6.
Whisk wet mixture into dry mixture until combined. Pour into cast iron.
7.
Top cake batter with 2/3 strawberries; keeping remaining 1/3 for serving. Slightly push berries into cake. Bake for 50 minutes
8.
Let cake cool, dust with powdered sugar and serve with whipped cream, remaining strawberries and basil.
