Potato Leek Soup

Ingredients

leeks

cup margarine

stalks celery, chopped
1
large onion, chopped

potatoes, peeled and cubed
8
cups chicken stock
Salt and pepper
Directions
1.
Cut the roots from leeks and discard tough outer leaves. Cut leeks in half lengthwise. Rinse. Slice crosswise into ¼-inch pieces starting with white end. Need 5 cups.
2.
Melt margarine in soup pot over medium heat. Add leeks, celery and onion and sauté until tender and lightly browned.
3.
Add stock and potatoes. Bring to boil, reduce heat to low and simmer, covered, for 30-40 minutes or until potatoes are tender. Season with salt and pepper.
4.
Use immersion blender to process soup.
