Chipotle Chicken Chili

Ingredients
3
chicken breasts
3
cans (14.5 oz) diced tomatoes
2-3
cans (14.5 oz) black beans
1
can (14.5 oz) chicken broth
1
onion
1
cup frozen corn kernels
Chipotle powder, chili powder, paprika
Directions
1.
Rinse and drain beans.
2.
Combine beans, tomatoes, corn kernels, and chicken broth in large pot and bring to boil.
3.
Season chicken with chipotle powder, cook in a separate skillet, then set aside.
4.
Dice and cook onions in same skillet.
5.
Shred chicken and add to pot.
6.
When onions are translucent, remove from skillet and add to pot.
7.
Season with chipotle/chili powder and paprika to taste.
8.
Let simmer for 2-4 hours before serving.
