Roasted Brussels Sprouts

Ingredients

lb Brussels Sprouts
3
tbsp extra virgin olive oil
1/2
tsp crushed red pepper flakes
2
tbsp fresh lemon juice, separated
2
cloves garlic, finely chopped or grated
1/4
tsp salt
1/2
tsp freshly ground black pepper
1/2
cup Parmesan cheese, grated (optional)
2
tbsp balsamic vinegar (optional)
Directions
1.
Preheat oven to 400 degrees (F).
2.
Cut off the ends of the brussels sprouts and slice in half, vertically.
3.
Toss in a large bowl with olive oil, crushed red pepper flakes, lemon juice, garlic, salt and pepper.
4.
Pour out onto the lined baking sheet and roast for 35 - 40 minutes, or until lightly brown and crispy on the outside. Shake the pan every 10 minutes to ensure even cooking.
5.
Once cooked, transfer to large serving bowl. Stir in balsamic vinegar and cheese (optional), mixing well to coat. Taste and adjust seasonings as needed.
