Southwest Chicken Salad

A loaded southwestern salad with cilantro-lime vinaigrette.

Ingredients

cup cilantro, stems removed
1
lb chicken breasts

cups romaine lettuce
2
cups mixed salad leaves
1
cup cherry tomatoes, halved
1/2
cup sweetcorn
1/2
cup black beans, rinsed
2
avocados, diced
FOR THE CILANTRO LIME VINAIGRETTE
4
cloves garlic
1/3
cup lime juice (2-3 limes)
1
cup olive oil
1
tsp kosher salt
1/4
cup rice vinegar (optional)
1
tsp honey
Directions
1.
Blend lime juice, rice vinegar, garlic, salt, and honey in a food processor or blender.
2.
Slowly add oil in a steady stream as blender is running. Refrigerate until use. (Keep refrigerated up to 10 days).
3.
Cook chicken breasts until golden brown, shred or dice, and set aside.
4.
Mix together salad leaves, corn, beans, tomatoes, chicken, and avocado, drizzle on your dressing and mix well.
