Sweet Potato Gnocchi With Cauliflower "Alfredo Sauce"

Ingredients
Gnocchi:

Sweet Potatoes
1
cup of Tapioca Flour
Alfredo Sauce:
1
tbsp of olive oil
1
head of cauliflower in florets
1
cup of water
3
cloves of garlic
salt
pepper
Toppings:
Sautéed Onions
Salt and Pepper
Directions
1.
Heat cloves of garlic (minced) on pan with olive oil until fragrant (2-3 min)
2.
Add in Cauliflower florets and water
3.
Simmer until soft and cooked (8-9 min)
4.
Place everything into a blender and mix until smooth
5.
Add salt and pepper to taste
6.
Microwave sweet potatoes until soft
7.
Peel sweet potatoes and mash them
8.
Add in 1 cup of tapioca starch
9.
Use hands to mix in, kneading into a ball
10.
Roll out in long pieces and cut by 1"
11.
Heat pan with some olive spray and pan fry the gnocchi
12.
Serve with Alfredo sauce and optional toppings
