Potato Crusted Tilapia

Teenie's specialty. PRO TIP: After peeling the potatoes, continue to use the peeler on the insides and then finely chop for an easier alternative to grating. MEAL TIP: Serve with lemon wedges and tartar sauce.

Ingredients

large russet potatoes, peeled and grated
1/4
cup fine dry bread crumbs
1/4
tsp dried thyme
1/4
tsp salt
1/4
tsp pepper

fresh or frozen thawed tilapia (or cod) fillets
1
cup all purpose flour
3
large eggs, beaten
Directions
1.
Preheat oven to 450 degrees and lightly coat a sheet pan with cooking spray.

Toss together the grated potatoes, bread crumbs, thyme, salt and pepper in a large bowl, place flour in a second bowl, and whisk eggs in a third bowl.

Heat oil in a large skillet.
4.
Dredge the fillets in the flour, shaking off excess, then dip the floured fillets into the egg to coat, letting the excess drip off, and finally crust the cod with the potato mixture, pressing to adhere.
5.
Add the crusted cod fillets to the oil and fry until the potato coating is crisp and lightly browned. Drain the cod on paper towels then transfer to the prepared sheet pan.
6.
Bake the cod about 5 to 8 minutes until cooked through.
