Roasted Vegetable Medley

Throw together all summer vegetables on hand for a vitamin-packed side dish.

Ingredients
Zucchini
Yellow squash
Red pepper
Red onion
Mushrooms
Garlic
Broccoli
Cauliflower
Asparagus
Carrots
Directions
1.
Choose a medley of any of the above veggies, peel and dice, and mix with olive oil, salt, and pepper.
2.
Roast veggies on the grill or in the oven at 450 degrees F for 30-40 min, stirring occasionally, until edges are brown.
