Street Corn Pasta Salad

Southwestern pasta salad with a chili lime dressing.

Ingredients

cups miniature farfelle pasta, uncooked

cups corn kernals
1/2
canned cup black beans, rinsed
1
large avocado
3
green onions
1/2
bunch cilantro
1
tbsp finely chopped jalapeno
6-8
strips hardwood smoked bacon, cooked (optional)
1/2
cup feta cheese (optional)
FOR THE CHILI LIME DRESSING
salt and pepper, to taste

tbsp honey
6
tbsp extra virgin olive oil
1
lime, juiced
1/2
tsp chili powder
Directions
1.
Whisk together oil, lime juice, honey, chili powder, salt, and pepper for the chili lime dressing. Set aside.
2.
Cook the pasta according to package directions. Drain and rinse under cold water. Make sure the pasta is completely dry.
3.
If using cob corn, grill corn and slice off cob.
4.
Chop avocado, green onions, cilantro, jalapeno.
5.
In a large bowl toss the completely dry and cooled pasta, cooled corn, black beans, avocado, onions, cilantro, and jalapeno with chili lime dressing.
6.
Optional: crumble bacon and cheese over the top.
