Gindea Family Mushroom Barley Soup

We used to make this all the time when we lived in Jerusalem and want to share the love. It's perfect for a cold winter day, it will warm you up from the inside :)

Ingredients
1/4
cup of marg (don’t need all this)
1
lb of mushrooms (1 carton)
2
large carrots chopped
2
pieces of celery chopped
1
onion chopped
1/2
cup barley rinsed
2
tbsp of flour
8
cups of veggie broth
1/4
cup of parsley
1
tbsp dill
Directions
1.
Melt butter, add mushrooms carrots celery barley and onion sauté for about 20 minutes add flour, stir for 5 minutes. Mix in the broth, bring to boil, reduce heat and simmer for 40 minutes with top, add herbs and season to taste.
