Crockpot White Chicken Chili

A warm, robust chili loaded with tender chicken and hearty beans. QUICK TIP: for a quicker meal, use rotisserie chicken and boil all ingredients on the stovetop for 30 min.

Ingredients
28
oz chicken stock (or 28oz water and 4 chicken bouillons)

cloves garlic, minced

tsp cumin
2
tsp oregano
1
tsp salt

tsp crushed red pepper
3-4
chicken breasts
2
cans great northern beans, drained
1
can shoepeg corn, drained
2
tbsp fresh lime juice
4
tbsp fresh cilantro
Directions
1.
Add chicken stock, chicken breasts, beans, garlic, cumin, oregano, salt, and crushed red pepper to crockpot. Stir gently to combine.
2.
Cover with lid and cook on low 6-8 hours or high 3-4 hours

Just before serving, remove chicken and shred with 2 forks. Return shredded chicken to slow cooker.
4.
Add the corn, lime juice, and cilantro. Warm through.
5.
Garnish with additional lime wedges and cilantro, if desired
