Lasagna For A Crowd

This recipe is wonderful for so many different venues, whether you are entertaining a home, taking something for a wonderful group party, football party, family dinners, I have used it many times and always get rave reviews. Serve it with a large caesar salad. It can be made ahead and frozen, then baked a couple of hours before your dinner. It is ideal for around the Christmas season if you entertain different family members at different times.

Ingredients

lb sweet Italian sausage

lb lean ground beef

cup minced onion 2 cloves garlic crushed

can (28 oz) crushed tomatoes
1
can (6 oz) tomato paste
2
can (6.5 oz) canned tomato sauce 1/2 cup water 2 tablespoons white sugar
1
Small Jar of Spaghetti Sauce such as: Paul Newman 4 cheese

tsp dried basil leaves
1/2
tsp fennel seeds
1
tsp Italian seasoning
1
tbsp salt 1/2teaspoon ground black pepper
4
tbsp chopped fresh parsley

lasagna noodles 16 ounces ricotta cheese
Galbani Whole Milk Ricotta
1
egg 1/2 teaspoon salt
8
oz of shredded mozzarella
1
large carrot - sliced with a potato peeler, very slim slices necessary

lb mozzarella cheese, shredded
8
oz Galbani Fresh Mozzarella Ball - slice in thin slices

cup grated Parmesan cheese
Directions
1.
In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned.

Stir in crushed tomatoes, tomato paste, tomato sauce, and Spaghetti sauce + water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.

Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water.

In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

Preheat oven to 375 degrees F (190 degrees C).

To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish.

Arrange 6 noodles lengthwise over meat sauce.

Spread with one half of the ricotta cheese mixture. Top with a third of shredded cheese

Place mozzarella cheese slices.

10. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray

Bake in preheated oven 350 degrees for 25 - 30 minutes. Remove foil, and bake an additional 25 minutes. Cool for 20 minutes before serving slicing into 3 x 3 inch squares.
