Orange Vanilla Glazed Berry Salad

This sweet and refreshing fruit salad is perfect as a side or dessert to any meal. PRO TIP: get creative with the fruit, and add apples, mandarin oranges, kiwi, or bananas, but eat it fast since these fruits will not stay as fresh.

Ingredients
FOR THE GLAZE

cup sugar
1/2
cup water
Juice and zest of 1 orange

tsp vanilla extract
FOR THE SALAD
2
pt strawberries, hulled and halved
1
pt blueberries
1
cup red grapes, halved
1
cup green grapes, halved
Mint leaves, for optional garnish
Directions
1.
Add sugar, water, orange zest, orange juice, and vanilla to a small saucepan.
2.
Bring mixture to a boil over medium-high heat, then reduce heat to low and simmer syrup for 15-20 minutes until it's thickened a bit. Chill until needed.
3.
Cut and prepare fruit into a large bowl and pour half the cold syrup over top. Toss fruit gently to coat, then drizzle in the rest.
4.
Garnish with mint leaves if desired.
