Mom's Potato Soup

One of my favorites since childhood. Grandma used to cut up celery in it but I always picked it out.

Serves 10people
Ingredients
5
lb bag Yukon Gold Potatoes, scrubbed or peeled and cut into smaller pieces
1
can cream of celery soup
1
stick butter
Milk
Season Salt
Shredded Cheese
Directions
1.
Boil potatoes until soft. Check by taking a piece or 2 out and pressing with a fork. If they smash they are ready. Drain all but 1-2 Cups of water. (this water is starchy and important to the consistency of the soup). Add butter and then mash potatoes and butter with a potato masher. Stir in celery soup. Add Milk to desired consistency. Season to taste. Continue to cook and still until hot. You made need to add more milk as you go if it gets too thick. Serve with cheese on top.

For even more flavor cook potatoes in chicken broth instead of water in a crockpot for several hours.
