Summer Cobb Salad

Cobb Salad is a favorite in our family. Making a huge Cobb Salad for a buffet or a luncheon for your friends is a real treat and it is not difficult, just chop and prepare ahead. I arrange it on a large platter and mix it as the party begins. When presenting the salad, I section it into sections like a piece of pie, all the radishes together, all the cheese together, all the bacon together, etc I use a homemade ranch dressing as the salad has a section of blue cheese. When you toss it be sure to thoroughly toss getting all the mixture together.

Ingredients

bunches of Romaine lettuce - cleaned and chopped
16
oz of crumbled good blue cheese
8
strips of bacon, fried and drained and crumbled
5
stalks of celery - chopped on an angle
8
large radishes - thinly sliced

Cooked chicken breasts - chopped into 1/2 inch pieces

avocadoes thinly sliced
4
hardboiled eggs chopped finely
2
medium-sized tomatoes, seeded and chopped in medium to small sized pieces.
Directions

Clean and chop everything, but the avocados and put the ingredients in separate small zip lock bags the day before or the morning of the event. It is quite a bit of chopping so I generally do it the day before. About 1/2 hour before the event, put the lettuce on the large platter and add some salt and pepper to taste. Remove the vegetables and chicken one a time from the bag and place them individually onto the lettuce in the shape of a piece of a pie. Right before the event, peel the avocado away from its pit and slice it, add a little lemon juice to the avocado so it does not brown on the plate. I generally leave the tomatoes for the center. Prepare your dressing the day before and remove it from the refrigerator when you start to plate the salad. I mix it as the guests line up at the buffet so they can see it prior to mixing it. Have your plates, bread, then the salad and your silverware and napkin at the end of the buffet line. Each person can take their own, or I generally serve it to their plates, so they don't have to juggle their plate.
