Mom's Banana Bread

My mom has been making this banana bread for me and my family for as long as I can remember. It is simple, quick and reminds me of home every single time...

Ingredients

large eggs

cup sugar
1/3
cup vegetable oil

cup over-ripe banana, mashed

vanilla extract

tsp baking soda

tsp baking powder
1
tsp salt
1
tsp cinnamon
1/2
tsp nutmeg

all-purpose flour
1
cup yogurt
1
cup chopped walnuts
Directions

Preheat oven to 350.

In medium bowl, beat together the eggs, sugar and oil. Blend in the mashed banana and vanilla extract. Combine all of the dry ingredients and add all at once to the banana mixture. Mix quickly and thoroughly, then stir in the yogurt and walnuts, mixing until just combined.

Pour the batter into a floured 9x5 loaf pan. Bake for 1 hour.

Alternatively, pour batter into muffin tins then bake for 20-25 minutes.
