Melt butter in skillet - add flour and stir until blended. Add onions, bell pepper, and garlic - cook until tender. Add crayfish fat and cook about 15 minutes, stirring occasionally. Add crayfish tails, cover and simmer about 20 minutes. Add seasoning, green onions, and parsley. Cook over low heat until seasonings blended. Serve over rice.
