Owen's Favorite Pancakes

Pancakes from scratch are definitely a favorite in our home. Before I discovered this recipe and added my own personal touches to it, we had relied on boxed ready-made pancakes bought from the store.

Ingredients
1
cup of All Purpose Flour
1/2
cup of White or Brown or Granulated Sugar
1
tsp Baking Soda
1
tsp Fresh Lemon Juice
1
tsp Honey (optional
1 1/2
cups of Milk
1
egg
2
tbsp Olive Oil or Butter
makes 8 pancakes. serves 2
Directions
1.
Mix all dry ingredients in a bowl.
2.
Add egg, oil (or butter), milk, lemon juice and honey.
3.
Mix all ingredients together until the batter is well blended. It will have a thick consistency. If you prefer it to be a little runny, add a little bit more milk.
4.
Preheat a non-stick skillet. I personally use a high setting when preheating and then moving it to medium once I know the skillet is very hot.
5.
Using a ladle (a serving spoon usually used for soup or stew), scoop the batter and spread on to the skillet. Cook for about a minute and flip for another minute.
6.
Serve with a square of butter on top and syrup or honey.
7.
These pancakes are perfect with bacon, scrambled eggs and/or sausages.
