Zach And Rachel's Black Bean Soup. With Onions.

Serve piping hot - with grated cheese sprinkled liberally over the top and preferably with some who-wheat/sourdough bread.

Ingredients

medium onions

cloves of garlic

qt of water

oz can peeled tomatoes
2/3
cup short-grain rice
12
oz black beans
1/2
cup olive oil
1
hearty sprig of coriander leaves
1
tsp fennel seeds
1
bay leaf
1
tsp chili flakes
cheddar (grated)
Directions
1.
Coarsely chop the onions and garlic (crush first), then put them in water and the olive oil and black beans in a large pot.
2.
Bring to the boil and then add coriander and spices; then simmer for one hour with no lid.
3.
Hand-crush the tomatoes and add them with their juice. Allow to simmer for 30 minutes.
4.
Add the rice, salt and pepper and simmer with no lid for another hour.
5.
Leave on a hot surface for as long as you like, it will reduce further.
