Breakfast Cake

Great to make on Sunday night to supply a healthy breakfast throughout the rest of the week! Double check oats if you have a gluten allergy; many brands are cross-contaminated.

Ingredients
4
cups oatmeal
1/2
cup flax seed, ground
1
cup craisins
1
cup raisins
2
tbsp cinnamon
2
tsp vanilla extract
1
cup almond milk
1
banana, mashed
1/3
cup brown sugar
1/2
cup apple sauce, no sugar added
Directions
1.
Cook oatmeal for about half of the normal time.
2.
Add everything together except for the brown sugar and almond milk.
3.
As you mix the ingredients, slowly add the almond milk until you have a consistency similar to cake batter.
4.
Pour mixture into non-stick casserole dish. Bake according to pan measurements.
5.
5 minutes before your cake is done baking, take out of the oven and sprinkle brown sugar over the top. Put back in oven until done.
