Macaroni Cheese

Can be made with out the Pancetta

Ingredients

z macaroni

oz Pancetta( diced
4
spring onions ( trimmed and sliced
4
oz Breadcrumbs
1 1/2
oz butter
1 1/2
oz flour
7
floz milk 10 floz doulble cream
pinch of nutmeg 1 teaspoon of Mustard
7
oz Saint Agur Chesse
4
oz Parmesan Cheese Grated
salt & pepper
Directions
1.
Pre heat the oven 200c/ gas 6
2.
Cook macaroni as per packet instructions.
3.
Fry Pancetta till crisp add spring onions and cook for 3-4 mins. Remove from the heat and add to the drained pasta in a shallow oven proof dish.
4.
Put the butter, flour, mustard and nutmeg over a gentle heat and cook till the butter has melted.
5.
Mix the milk and cream together and add alittle to the butter mixture stirring well, keep adding and stirring till all the milk has been added.
6.
Turn up the heat for a minute or two the sauce will thicken considerably. remove from the heat and add the cheeses to the sauce,stir well and season.
7.
Add the sauce to the pasta and stir well. add breadcrumbs to the top and bake in the oven for 20- 30mins.
