Paleo Meatballs

My kids favorite dish! I usually freeze them uncooked. Make them into meatballs and place in a 9X13 pan in the freezer. Once the meatballs have frozen place in freezer bags.

Ingredients

lb ground beef
1
lb ground pork
2
celery stalks
2
medium carrots
1/2
vidalia onion
4
cloves garlic
4
eggs
1/2
cup almond meal
2
dried oregano
2
black pepper
sauce ingredients
2
cans (16 oz) diced tomatoes
2
cans (6 oz) tomato paste
1
handful of fresh basil leaves, torn
5
cloves garlic, minced
sea salt and pepper to taste
Directions
1.
Coarsely chop celery, carrots, onion, and garlic cloves in food processor. Combine vegetables with the rest of the meatball ingredients (beef, pork, eggs, almond meal, oregano, pepper). Mix with hands. Form into large meatballs and place in the bottom of crockpot. Mix together sauce ingredients and pour over meatballs. Cook in crockpot on low 8 hours. Serve with baked spaghetti squash and pasta sauce or eat with a side of salad and sweet potatoes!
