Lemon Drizzle Cake

Alternative I have made include: Lemon and Lime drizzle. Orange drizzle( really nice with a drizzleof chocolate to decorate when cooled) Lime drizzle.

Ingredients

oz Softened Unsalted Butter
6
oz Self-raising Flour
1
tsp Baking Powder
6
oz Caster Sugar
2
large eggs
6
tbsp Milk
2
lemons (unwaxed, finely grated rind of
juiceof 2 lemons
4
oz Caster Sugar
Directions
1.
Preheat oven to 180 degrees C/gas mark 4.
2.
Grease and Line a loaf tin
3.
Cream the butter and sugar together until pale and fluffy.
4.
Add the eggs beating well .
5.
Foldin the zest,flour, baking powder and milk.
6.
Spoon mixture into tin and smooth with back of spoon.
7.
Bake for 30-40 minutes until golden & firm to the touch.
8.
Beat together icing ingredients and pour over the cake while it is still HOT.
9.
Cool in tin .
