Mari's Cheese Soup

Ingredients
1/2
cup butter
1/2
cup red onion
2 1/2-3
cups vegetable broth

medium red potatoes
Medium White sauce:
8
tbsp butter
8
tbsp flour
4
cups milk
1
tsp salt
1/2
tsp pepper
4
cups cheddar cheese
2
cans creamed corn
Directions
1.
In large soup pot, melt butter and sauté onions in butter.
2.
Cut potatoes (peeled or unpeeled- unpeeled add color) and place in pot with sautéed onions.
3.
Add vegetable broth enough to cover potatoes.
4.
While potatoes cook in broth, make medium white sauce and when thickened, add cheese to white sauce.
5.
Thoroughly melt cheese in white sauce and then pour into broth mixture.
6.
Thoroughly stir and mix in the cheese white sauce.
7.
Add the two cans of creamed corn and heat soup thoroughly.
8.
Best eaten with warm bread.
