Keto Avocado, Bacon And Goat Cheese Salad

oz goat cheese

oz bacon

avocados
4
oz pecans

oz arugula or lettuce
Dressing (makes 8, 2 T servings)

tbsp fresh lemon juice

cup mayonnaise
1/2
cup avocado oil

tbsp heavy whipping cream
1
tsp dry mustard
1/2
tsp salt
1/2
tsp pepper
1/4
tsp stevia
1
tbsp Fresh parsley
1
clove garlic
Directions
1.
Preheat the oven to 400°F (200°C) and place parchment paper in a baking dish.
2.
Cut the goat cheese into round half inch (~1 cm) slices and place in the baking dish. Bake on upper rack until golden.
3.
Fry the bacon in a pan until crispy.
4.
Cut the avocado into pieces and put on top of the salad. Add the fried bacon and goat cheese. Sprinkle nuts on top.
5.
Using an immersion blender, make the salad dressing. Place all dressing ingredients in a bowl and blend.
