Jambalaya With Cauliflower Rice

Ingredients

links of Amylu Smoked Andouille Chicken Sausage (or 156g chicken andouille sausage)

large shrimp
120
gr cooked, diced chicken
1
cup celery, chopped
1
orange bell pepper, chopped
1
cup tomatoes, chopped
2
cloves garlic, minced
1/2
cup onion, chopped
2
tbsp butter
1/2
cup chicken bone broth
4
cups cauliflower rice
2
tsp Creole seasoning
Directions
1.
Chop all veggies and garlic
2.
Prepare shrimp (peel and de-vein)
3.
Cut sausage into 1/2" pieces
4.
Sauté garlic, onion, peppers, celery, and sausage in butter until veggies are tender
5.
Add bone broth, cauliflower rice, tomatoes, Creole spice, and shrimp.
6.
Cook until cauliflower rice is tender and shrimp is cooked.
7.
Add in cooked chicken, and cook for about 2 more minutes.
8.
Note: you can also cook the shrimp separately on the grill or blackened and add on top
