Low Carb Hummus

Ingredients

cups peeled & chopped raw zucchini
3/4
cup tahini (sesame paste)
2-3
tbsp fresh lemon juice
1/4
cup olive oil
2
cloves of garlic, peeled
1
tsp kosher salt (or to taste)
1
tbsp ground cumin
Directions
1.
Salt chopped zucchini to release some of its liquid. Salt with about 1/2 tsp and let sit for about 20 mins. Rinse, strain and press out as much liquid as possible.
2.
Combine all ingredients in a blender and puree until thick and smooth.
3.
Taste and adjust seasonings to your preference.
4.
Pour into a shallow bowl and garnish with parsley, paprika (or sumac) and a drizzle of olive oil if desired.
