Raw Brussels Sprout Salad

Most people don't eat brussels sprouts raw but they are far more beneficial in vitamin and mineral content if not cooked!

brussel sprouts
1/2
cup very thinly sliced shallots
1/2
coarsely chopped walnuts
1 1/2
tbsp apple cider vinegar

tbsp olive oil
Directions

Trim the ends from each of the brussels sprout. Peel the leaves off individually and add to a large mixing bowl. Add the shallots, walnuts, and raw apple cider vinegar. Add the olive oil along with seasonings to taste. Brussels sprouts are an outstanding source of glucosinolates which create detox-activated compounds called isothiocyanates. Studies have shown that certain compounds in brussels sprouts block the activity of sulphotransferase enzymes that can be beneficial to the health and stability of DNA within the white blood cells. Also, being high in protein and fiber, brussels sprouts help lower cholesterol by binding with bile acids which are later excreted from your body. Clearly, if you are trying to lose weight and lower your cholesterol this brussels sprout salad is packed with health benefits.
