Buckwheat Gluten Free Pancakes

These pancakes are good for any part of the day and are also a healthy brunch option.

cup buckwheat flour
1/2
cup brown rice flour

tbsp sugar
1 1/2
tsp baking powder

tbsp arrowroot starch
1
tbsp tapioca starch

cups unsweetened almond milk

tbsp hot water
coconut oil for cooking

sliced banana (on side
Directions

Mix together the buckwheat flour, brown rice flour, sugar, baking powder, arrowroot starch, and tapioca starch. In a separate bowl, combine the almond milk, and water. Add the dry ingredients and mix together until the batter is smooth. Heat a large pancake pan and add some coconut oil. Ladle out the pancake batter and cook for 3-4 minutes before flipping over. Enjoy plain or with peanut butter or coconut nectar.
