Power Oatmeal Bars

This version is a revised version of the Starbucks Oat Bars. Nowhere near as sweet as the original ones from Starbucks and opposite the calories.

Ingredients

cup + old fashioned rolled oats
1
cup + granola
1
cup + Rice Krispies
1/2
cup Skor Chips
1/2
cup white or dark chocolate chips
1/2
cup raw seeds, pumpkin, sunflower or chia
1
tsp cinnamon
1/4
cup unsalted butter
1/4
tsp fine sea salt
1/4
cup corn syrup
1/4
cup raw honey
1/4
cup brown sugar
1
tsp vanilla
2
tbsp + filtered water
Directions
1.
Preheat oven to 350 degrees F. In food processor, lightly pulse 1 cup of rolled oats & granola, still course but not chunky. (rolling pin works too)
2.
Mix all dry ingredients in a large bowl, make a well, then mix all wet ingredients in a bowl, mix wet into dry. If the mixture feels a little dry or if you want softer bars, add one more tbsp of water.
3.
Don’t panic when you hear the snap, crackle, pop.

Pour all the ingredients into a lightly greased 9 x 9 glass dish or pan and press down until it’s compact and even. Should be about ½ thick.
5.
Reduce oven temperature down to 300 degrees F, bake 15 minutes. Let it cool on rack, then let cool in the fridge for at least 1 hour.
6.
Cut into desired portions. Store with pieces of parchment paper in between the bars in an airtight container in fridge or freezer. I buy mini zip-lock snack bags, perfect for these.
