Almond Roca

An easy tasty way to make homemade Almond Roca!

Ingredients
1 1/2
cups of coarsely chopped almonds
2 1/4
cups light brown sugar
2 1/4
cups butter
1
tbls salt
3
cups of dark chocolate
Directions
1.
Sprinkle half the almonds onto the non-stick pan.
2.
In a saucepan add the butter, salt and light brown sugar in a sauce-pan. You need to stir constantly to make sure it doesn't burn! Use a candy thermometer to watch the temperature. When it hits 290 degrees F take it off the heat... be very very careful.
3.
Pour out the candy onto the almonds.
4.
Get a metal spatula and dip it into hot water to spread the candy evenly across the almonds.
5.
Let it stand for a few minutes.
6.
Melt the dark chocolate and add it on top of the candy.
7.
Sprinkle the rest of the almonds on top and lightly press them down.
8.
Let it sit, then cut to wanted size.
9.
ENJOY!!
