Banana Split Cake

We first had this cake in a small place on the Monterey Peninsula in California. It is delicious, it is best served for a decadent girls weekend or a children's party, children positively love it with an ice cream station for a birthday party. If done ahead and you have refrigerator space it is really fun.

Ingredients

(3) box cake mixes: Chocolate, Strawberry, and Yellow
Mix the cake mixes according to directions, but add ¼ cup of cake flour, plus 1 egg, plus one tablespoon of oil, mix and bake each cake mix. In my pans, I bake one entire box in one pan. I use Wilton 9 inch gold pans.

Betty Crocker Fluffy Butter Cream Frosting

cups of sliced strawberries

sliced bananas

tbsp of hot fudge chocolate ice cream topping

small can of crushed pineapple – drained and squeeze 90 % of the liquid out of the pineapple, I use cheesecloth to drain and squeeze it through the cheesecloth.

Start the assembly the day of your event in the morning if the event is in the early afternoon, do it the night before, You need to construct the cake while the layers are still frozen and give it enough time to defrost. Again, it must be kept in the refrigerator. Crisscross long pieces under the first layer of the cake, this will be used to adhere the nuts to the side of the cake and then will be removed. I spray it with Pam so it pulls out easily. Place the chocolate layer on the bottom. Coat it with a layer of frosting, slice the bananas and place on the cake layer, now gently pour or spread the hot chocolate, then add the next layer and simply frost it with the combination of frosting and cool whip which you have mixed. Add the vanilla layer and place frosting mix, place the very squeezed out pineapple on the frosting layer, add the next vanilla layer and place the frosting only on it, next the strawberry layer, with frosting and place the sliced strawberries all over that layer, next the strawberry cake layer, which is the top, frost top and sices liberally with frosting. Place the nuts around the base of wax paper and gently pick up the wax paper with nuts and adhere it to sides of the cake, doing it with the strips of wax paper to all sides of the cake, covering it all the way around. Pull out the strips of wax paper and clean the side of the plate, place in the refrigerator. When you serve it take three strawberries and place them in the center of the cake.
