Tomato And Buffalo Cheese Salad

In the summer months, this is one of my absolute go-to recipes, whether you are serving it on a buffet, backyard party or an elegant dinner party I think this is one of the most versatile of summer recipes. Having the best tomatoes fresh from the farm to table is essential. I love beefsteak tomatoes. Taste test them and if need be add just a tiny bit of sugar and salt to them to make them sweet and savory to start the recipe off beautifully... it is colorful, delicious and all your guests will rave about this salad.

Ingredients
cup balsamic vinegar
1/4
cup honey

large tomatoes, cut into 1/2-inch slices
1
(16 oz) package fresh mozzarella cheese, packed in water, cut into 1/4-inch slices
1/4
tsp salt
1/4
tsp ground black pepper
1/2
cup fresh basil leaves
1/4
cup of very good extra-virgin olive oil
Directions
1.
Stir balsamic vinegar and honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 cup, about 10 minutes. Set the balsamic reduction aside to cool.

Arrange alternate slices of tomato and mozzarella cheese decoratively on a serving platter. Sprinkle with salt and black pepper, spread fresh basil leaves over the salad, and drizzle with olive oil and the balsamic reduction.
