Brown Sugar Salmon

Recipe from Cathleen. I absolutely love this recipe – it’s easy enough for a weeknight but special enough for a dinner party. I usually serve it with sautéed green beans or spinach.

Ingredients

(6 oz) salmon fillets, skin on

tbsp olive oil
2
tbsp brown sugar
2
tsp kosher salt
1
tsp ground black pepper
1/2
tsp ground cumin
1/4
tsp dry mustard
1/8
tsp ground cinnamon
Directions
1.
Preheat oven to 350 degrees

Combine brown sugar, salt, pepper, cumin, dry mustard, and cinnamon in small bowl and set aside
3.
Rinse the salmon in running water to remove any loose scales and then gently pat dry with a paper towel. Remove all excess water prior to adding rub
4.
Rub the spice mixture on the top side (non-skin) of the salmon fillets
5.
Heat an oven-proof fry pan over medium-high heat. Add the olive oil to the pan and allow it to get hot. Place the fillets, rub-side down, in the hot oil. The fish should sizzle (if not, turn up heat)
6.
Cook 2-4 minutes until the fish releases easily from the pan and the rub side is nicely browned. Then flip fillets over to skin side and transfer the pan to the oven.
7.
Roast the salmon about 5-8 minutes, until it flakes easily with a fork.
