Greek Yogurt Pancakes & Honey Baklava Syrup

Delicious, fluffy, healthy pancakes – 195 calories, 13 grams of protein, 10% of your daily calcium!

Ingredients

oz fat free Greek Yogurt (plain or whatever flavor you like

egg whites
1
/3c + 2 tbs whole wheat flour (i’ve used regular flour too, works fine

tsp of baking soda
dash of cinnamon (optional
Directions

Place a large pan on medium heat. Combine yogurt and egg whites in a small bowl and whisk together well. If you are using plain yogurt, you can whisk in a little sweetener at this point if desired. Add your flour, baking soda, and cinnamon and stir to combine. Gently stir in your optional ingredients (diced fruit, etc)

Spray the pan with non-stick. Using a ¼ measuring cup, scoop the batter into the pan. Let cook for 4-5 minutes, then flip and cook for another 4-5 minutes until the pancakes have set. Should make 6 pancakes (3/serving).

The recipe here is for plain greek yogurt, but you can use flavored if you like – or I’ll throw in whatever fruit or other ingredients I have on hand – I love using strawberry yogurt and tossing in some unsweetened coconut flakes, or some dark chocolate chips. Also 1/3 c mango and 3 TBS roughly chopped pecans is delicious. Also, these are great with maple syrup, but this honey baklava syrup is delightful and keeps in the fridge (store in old salsa container, etc) for a few months.
