Quinoa Ten Veggie "Fried Rice"

So many veggies so you know its good for you. But the quinoa contains protein that keeps you full all day! good to make in mass quantities and reheat when on the go!

Ingredients

cups quinoa
4
cups filtered water

tbsp unrefined coconut oil

cup chopped onions
1
cup diced scallions
2
garlic cloves
1
tbsp minced gingerroot
1
tsp miso paste
2
carrots
2
cups coarsely chopped Shitaki mushroom tops
1 1/2
tsp apple cider vinegar
1/4
cup low sodium tamari
1/2
tsp red pepper flakes
1
red pepper, cubed
2
cups Chinese broccoli tops, stems saved for another purpose
1/2
lb green beans, ends trimmed and cut into 2 inch pieces
1
tbsp raw coconut nectar or maple syrup
1/2
cup sliced radishes
1/2
lb snow pea shots, diveined
1
tbsp sesame oil
seasonings to taste
Directions
1.
Soak 2 cups quinoa overnight. Bring 4 cups of water to boil. Add the rinsed quinoa and lower the heat to a simmer. Cook the quinoa until Al-dente (about 3 min.). Meanwhile, heat the coconut oil in a large sauté pan. Add the onions and scallions and cook until the onions are translucent. Add the garlic, cooking another minute, and then add the ginger, miso, carrots, and Shittaki mushrooms, add cook for a few more minutes. Stir in the raw apple cider vinegar, Tamari, and red pepper flakes. Add the rest of the vegetables, except for the radishes and snow pea shots. Stir in the raw coconut nectar. Drop the radishes and snow pea shots in at the very end and cook for no more then 3 minutes so they stay virtually raw. Remove from the heat, stir in the sesame oil, adjust seasonings to taste, and serve.

Owing to their high fiber content, raw vegetables leave you feeling full for longer and hence reduce food cravings.
