Baked Pasta Nests

This quick and easy pasta recipe, includes grilled vegetables and crispy bread crumbs. Great for lunch or dinner with a crisp glass of your favorite white wine.

Ingredients
1
box of spaghetti
1
large eggplant, sliced about 1 inch thick
2
green zucchini's, washed and sliced, about 1 inch thick
1
red pepper, deseeded and sliced
6
tbsp olive oil
2
garlic cloves, peeled and crushed
2
tbsp melted butter
1
cup white breadcrumbs
Directions

Cook the spaghetti al dente in boiling salted water for 8 to 10 minutes. While pasta is cooking, place olive oil and garlic in a small bowl, allowing garlic to infuse oil. Once pasta is al dente, drain, and immediately cool off and set aside.

Place the vegetables on a large baking sheet and drizzle with olive oil and season with salt and pepper. Grill or sear the vegetables in a large skillet for 10 minutes until tender. Set aside and keep warm.

Divide the cooked spaghetti in 4 sections on a large baking sheet. Curl spaghetti around a fork to form nest shapes and brush with the melted butter and sprinkle with the breadcrumbs.

Bake the pasta nests for 10-15 mins at 400F.
5.
On a large serving platter, align cooked veggies on plate and place a pasta nest on top of grilled vegetables.
